The special elixir: kefir made with milk

Drinking kefir is a dairy product, which is produced using kefir grains (also called kefir fungus). The real kefir grain is an extraordinary symbiosis between lactic acid bacteria and yeast fungi. It can grow from just one millimetre of size up to several centimetres. After a certain time, it is possible to divide it into parts. The most important active substance for changing the milk into drinking kefir is the bacillus Sancaszius.

Kefir was imported from Asia via Eastern Europe to Germany, where it is becoming more and more popular all the time. On the local market, one can buy dairy products named "mild Kefir". But these really have nothing to do with the original thing, as they are produced using bacteria cultures.

Kefir made with milk is not only very tasty, it is also very healthy. One indication for the healthy effects of kefir is the fact, that in the Caucasian area, where people drink a lot of kefir, ailments like cancer, indigestion and tuberculosis almost do not exist.
